Turtle bread recipe
Ingredients :
500 grams High protein flour
500 grams Medium protein flour
250 grams granulated sugar
14 grams salt
20 grams instant yeast
5 grams improofeer bread
120 grams roombutter
8 gr cake emulsifier
2 egg yolks
1 whole egg
125 ml fresh milk
+/_ 400 ml ice water
a little evaporated milk for brushing
filling : chocolate and cheese
how to make :
Put the flour in the container of the bread mixer... add granulated sugar, instant yeast, bread improofeer, then stir all the ingredients at low speed until evenly mixed. then add cake emulsifier, whole egg, egg yolk, fresh milk and ice water... stir all the ingredients at medium speed until mixed... then finally add salt and butter. Stir again at full speed until the mixture becomes really smooth.
After that, rest the dough for 10 minutes. then weigh the dough, the size according to your wishes, fill with fillings such as chocolate and cheese. then shape the dough like a turtle or whatever shape you want.
then put the bread dough that we made earlier on a baking sheet that has been smeared with a little butter, or we can also use baking paper. After that, rest again for approximately 40 - 60 minutes. until the bread dough is almost 80% risen. After that, put it in the oven at 200° to 250° oven until the bread is cooked or around 10 - 12 minutes. Remove the bread from the oven,
